CAGAYAN DE ORO CITY – What started as a passion for baking sourdough two years ago has now grown into the city’s first sourdough-based bakery. The Sourdough Co. Baked by Psy Cua is now open at Ayala Malls Centrio, serving freshly baked sourdough breads and pastries every Friday to Sunday from 10:00 a.m. to 9:00 p.m. at the Ground Level Bridgeway.
The shop offers an array of handcrafted favorites such as:
• Sourdough Country-Style Loaf: plain, seeded, cranberry & walnut
• Sourdough Sandwich Loaf: whole wheat, rustic sesame, classic white
• Sourdough Focaccia: plain, garlic & herb, olive & rosemary, garlic & rosemary
• Sourdough Banana Loaf: plain, with mixed seeds & nuts, with chocolate & walnuts
• Sourdough Cookies: chunky chocolate chip with walnuts, oatmeal with chia, flax, walnuts, cranberries

Also available are eco-friendly tote bags perfect for gifting along with fresh loaves. And soon, the bakery will introduce homemade spreads specially made to pair with sourdough.
Sourdough is made through a natural fermentation process using wild yeast also known as sourdough starter, giving it a signature tangy flavor, chewy texture, and gut-friendly benefits. “It’s bread that’s alive wholesome, nourishing, and made without shortcuts,” Psy shares. Unlike most commercial bread, sourdough is nutrient-rich, lower in glucose, and preservative-free.

For Psy, sourdough is more than just bread it’s a craft and a commitment. She began baking two years ago, driven by her love for slow, mindful food. What started in her home kitchen soon found its way to friends, family, and eventually a growing community who came to love her loaves not just for their taste but also for their health benefits.
“I wanted to make bread that’s healthier but still comforting,” she says. “Every loaf we make is prepared with care, using only natural ingredients that I’d be proud to serve my own family.”

At The Sourdough Co., she uses alkaline water, whole wheat flour, and Himalayan pink salt, creating bread that’s as nourishing as it is delicious.
